Kasumi knives are produced by Sumikama Cutlery in Seki, Japan. Sumikama Cutlery specializes in producing knives from the most advanced materials with the most advanced manufacturing techniques. Kasumi V-Gold No. 10 Damascus Pattern knives are made from 33 layers of stainless steel. Only the middle layer acts as the cutting edge, and it is made using V-Gold No. 10 stainless steel. V-Gold No. 10 is a high carbon stainless steel with cobalt, manganese, molybdenum and vanadium for added durability and ease of sharpening. The addition of cobalt to this steel requires special tempering in order to maximize the full benefit of this steel. Sumikama's technique for this special tempering is a closely guarded secret.

I just did a review on the 8 in. version of this knife, and thought I would do one on this one as well.All I can say is WOW! I am a sushi chef that has used many knives, and the Kasumi line of knives is a very strong line of knives. (No pun intended)I first bought the 8 in knife, looking for a new roll cutting knife (which it's the best decision I've made in knife buying), which led me to look and then purchase this one.Personally, the combo of the 8 in. and this 10 in. is the best duo I've used standing behind the bar. This knife was exactly what I was looking for.The 8 in. for rolls, and this one for just about everything else (not prepping but in the heat of things).It's well balanced, feels good in my hand, beautiful, and retains a great edge (60 Rockwell Hardness rating).Excellent Knife!

Super knife

Exactly what I was looking for.It's not a Hattori but then it doesn't have Hattori pricing.There is so much choice when it comes to Japanese knives but if you need a carving type I'm not sure how you could go wrong with this one.
